February invites us to slow down and find comfort from the cold. At Paparmane, the month of love is meant to be enjoyed solo, with a loved one, or among friends — what matters most is letting love prevail.

For the occasion, Chef Yoann Bouyer presents a selection of favorite bites: an aphrodisiac chocolate coquillette, a comforting duck confit–style parmentier tartlet, and, by popular demand, the return of the griotte cherry and hibiscus Battenberg, available throughout the month of love.

As the light begins to shift and the air gently hints at spring, Quebec celebrates one of its most precious treasures: maple syrup.

At Paparmane, Sugaring Season unfolds with finesse and subtlety — a refined tribute to our culinary heritage. Under the creative direction of chef and co-owner Yoann Bouyer, tradition meets elegance, and time-honoured flavours return to the table with delicacy.

At the heart of the season:

a chic mini tourtière, rich and comforting,
notre interprétation du pouding chômeur, tout en finesse et en équilibre,
a brioche bun filled with maple-glazed ham, gently braised and caramelized,un petit pain brioché fourré au jambon laqué, doucement braisé et caramélisé
and the delicate presence of maple syrup woven throughout several creations on our Sugaring Season tiered platter.
